COLLABEERATIONS
Friendships and collaborations play an important role in the of growth and creativity in the craft beer world. In 2008 we began a collaborative partnership with New Belgium Brewing from Fort Collins, CO that has allowed us to produce larger quantities to meet demand of some of our mainstay and seasonal offerings while also offering New Belgium the opportunity to use our smaller facilities for more creative and experimental brews. The Trip series (seven brews so far) is the first family of brews to come out of the heads of Elysian and New Belgium. We also did a creative brew with Chuck from Green Flash with apples, pink peppercorns and rosehips.
New Belgium Collabeerations
The trip i
Trippel IPA. Dark-golden in color, The Trip starts with a complex aroma of citrus fruits, tangerine, pineapple, grapefruit and spice. Bold on the palate with lingering hoppiness and medium bodied. The Trip heads home with a dynamic, zesty hop and pleasing citric finish.
The trip ii
Citra-hop Belgian-style Pale Ale. Brewed with mostly Pale, white wheat, Munich, Cara-hell and small amounts of Crystal malts. Bittered with Magnum and finished with Citra hops. Dry-hopped with Citra and spiced with lemongrass and grains of paradise.
The trip iii
Dark Sour Blend. Trip III is a blend of Dark Lager (70%) brewed at Elysian and aged sour ale (Foudre 13-30%) brewed at New Belgium. Reddish-brown with hints of Sour cherry and peach with a very nice chewy-tart finish.

Juniper Ale. Inspired by Finnish Sahti, a traditional rye ale brewed with juniper. Trip IV is a hazy amber ale with citrus and juniper aromas, a sturdy mouth-feel and a crisp and lively "finnish".

Cocoa Cherry Brown Ale. A mahogany-colored ale brewed with Pale, Crystal 77, Munich, and Chocolate malts and bittered with German Northern Brewer hops. Organic vanilla paste is added to the whirlpool, organic cherry concentrate in the fermentor and organic Peruvian cocoa powder in the conditioning.

Wet Hop Ale. Brewmaster Grady Hull and Alex Jesse from New Belgium flew from
Fort Collins, CO to Seattle, mashed in with Elysian-Capitol Hill Brewmaster Markus Stinson and fellow brewers, then drove out to the Gamache Family hop farm in
Yakima to bring back freshly harvested wet hops which were used in multiple
additions during the brew that same day.
The trip vii - "Winter Here, Summer There"
Black Belgo IPA. Brewed with Mexican dark roast malt and Chilean roasted barley with Brazilian black sugar in the boil. Bittered with Argentenian Cascade hops and finished with El Dorado whole hops.

Imperial IPA. brewed with Pale, Crystal and honey malts. Falconer's Flight hops were used for bittering, finishing and dry-hopping. Falconer's Flight is a limited release blend comprised of many of the Northwest's most premier hop varieties including the highly acclaimed Citra, Simcoe, and Sorachi Ace along with experimental hops and numerous other NW varieties. Partial proceeds from these hops benefit the Glen Hay Falconer Foundation that awards a scholarship to a NW brewer each year. ABV 9.5%
The trip ix
Down Under IPA.Wonderful hops are coming out of Australia and New Zealand all of a sudden, full of tropical notes and aromas. The idea for a Down Under IPA builds an ethereal hop structure of Pacific Gem and Nelson Sauvin from New Zeland and Australian Galaxy atop a medium weight pale ale. In addition, the exotic aroma of the hops is augmented with actual passion fruit. Brewed with pale and Crisp 77° crystal malt. ABV 6.3%.
Green Flash Collabeeration
THE RED QUEEN
Green Flash collaboration. Brewed with pale and Munich malts and bittered with German Northern Brewer. Pink peppercorns and rose hips added to the kettle, with more pink peppercorns and 2 bushels each of Pink Lady and Braeburn apples added to the secondary fermenter.
