Malts

9# pale malt (we use Great Western Premium 2-row)
1# Crisp 77° crystal malt
1# Weyermann Munich malt
4 oz Weyermann Cara-Hell
2 oz Special B

Hops

8.4 AAU Chinook @ Boil
1/2 oz Cascade & 1/2 oz Centennial @ 2 minutes before end of boil
1/2 oz Cascade & 1/2 oz Centennial @ whirlpool/end of boil

Directions

Mash at 154° for 60 minutes; run off for 90 minutes; boil 90 minutes; pitch attenuative American ale yeast such as Wyeast 1056 — we use Siebel BR96, a relative.

Request a tour

We offer brewery tours by appointment, so if you have an interested party, please call our main office (206-860-1920) anytime between 8am-5pm to request a tour. If it’s just one or two people, you are also welcome to just ask at the bar when you come in and as long as the brewers are not too busy, they will take you back for a quick tour. If neither of these options is available to you, please enjoy watching our brew team at work from the comfort of your dining table as the majority of our brewery is visible through the large windows in the back of our pub.
