
Pumpkin Streusel Night Owl Loaf Cake (vegan)
Ingredients
For Pumpkin Cake:
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1 teaspoons baking powder
- 1 ½ teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground allspice
- ½ teaspoon ground nutmeg
- ½ cup full fat coconut milk (from well shaken can)
- ½ cup Elysian Night Owl Pumpkin Ale
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
For Pecan Streusel:
- 1/3 cup all-purpose flour
- 1 tablespoon cornstarch
- ¼ cup brown sugar
- 2 tablespoons white sugar
- ½ cup chopped pecans
- ½ teaspoon cinnamon
- ½ teaspoon salt
- ¼ coconut oil, melted
Instructions
- Preheat the oven to 325°F.
- In a mixing bowl stir together the flour, brown sugar, baking powder, baking soda, salt, cinnamon, allspice, and nutmeg.
- Add the coconut milk, Night Owl beer, pumpkin puree, and vanilla extract, stir to combine.
- Pour into a 1.5 quart loaf pan that has been sprayed with cooking spray.
- In a small bowl stir together all the streusel ingredients. Add the streusel to the top of the loaf in an even layer.
- Bake for 60 -70 minutes or until the top springs back when lightly pressed.
- Allow to cool before removing from the pan, slicing and serving.
