Pumpkin Streusel Night Owl Loaf Cake (vegan)

Ingredients

For Pumpkin Cake:

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 teaspoons baking powder
  • 1 ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground allspice
  • ½ teaspoon ground nutmeg
  • ½ cup full fat coconut milk (from well shaken can)
  • ½ cup Elysian Night Owl Pumpkin Ale
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract

For Pecan Streusel:

  • 1/3 cup all-purpose flour
  • 1 tablespoon cornstarch
  • ¼ cup brown sugar
  • 2 tablespoons white sugar
  • ½ cup chopped pecans
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ coconut oil, melted

Instructions

  1. Preheat the oven to 325°F.
  2. In a mixing bowl stir together the flour, brown sugar, baking powder, baking soda, salt, cinnamon, allspice, and nutmeg.
  3. Add the coconut milk, Night Owl beer, pumpkin puree, and vanilla extract, stir to combine.
  4. Pour into a 1.5 quart loaf pan that has been sprayed with cooking spray.
  5. In a small bowl stir together all the streusel ingredients. Add the streusel to the top of the loaf in an even layer.
  6. Bake for 60 -70 minutes or until the top springs back when lightly pressed.
  7. Allow to cool before removing from the pan, slicing and serving.
