Beef Short Rib Sloppy Joe

Ingredients

  • 5 lbs beef short rib flap
  • 1/2 cup brown sugar (divided into 1/4 cup portions)
  • 2 tablespoon salt
  • 1 yellow onion
  • 2 carrots
  • 2 cups Rolling Stone Lager
  • 1 cup BBQ sauce
  • 1/8 cup of beer mustard
  • 1/8 cup of malt vinegar
  • 1 cup of ketchup

Instructions

  1. Rub meat with 1/4 cup of brown sugar and salt, let sit in the refrigerator for 24 hours.
  2. In hot dutch oven sear meat on all sides and pull out once color forms.
  3. Add vegetables and remaining brown sugar and caramelize, deglaze with wet ingredients then add the beef.
  4. Cover and place in the oven at 350°F for 3 hours.
  5. Shred and serve.
