
Beef Short Rib Sloppy Joe
Ingredients
- 5 lbs beef short rib flap
- 1/2 cup brown sugar (divided into 1/4 cup portions)
- 2 tablespoon salt
- 1 yellow onion
- 2 carrots
- 2 cups Rolling Stone Lager
- 1 cup BBQ sauce
- 1/8 cup of beer mustard
- 1/8 cup of malt vinegar
- 1 cup of ketchup
Instructions
- Rub meat with 1/4 cup of brown sugar and salt, let sit in the refrigerator for 24 hours.
- In hot dutch oven sear meat on all sides and pull out once color forms.
- Add vegetables and remaining brown sugar and caramelize, deglaze with wet ingredients then add the beef.
- Cover and place in the oven at 350°F for 3 hours.
- Shred and serve.
